Yield: 30 cookies

3 oz. Butter
3/4 C Powdered Sugar
1 1/3 C Marshmallow Cream
1 t Vanilla extract
For Cakes- Cream brown sugar and butter in a large bowl with a wooden spoon then add the egg. Separately, mix remaining dry and wet ingredients in their own bowls. In the bowl with butter and sugar, mix ingredients in batches alternating between dry and wet. Heat oven to 325 degrees. Use a tablespoon to form batter onto greased cookie sheet. Bake for 7-8 minutes. Let cool.
To assemble- mix filling ingredients and place a spoonfull between two cakes to make a sandwich.
To eat- Take a bite and yell “WHOOPIE!”
They’re like soft oreos. I’ve literally had a room full of folks yelling WHOOPIE! when serving them. Lots of fun!
